Kangaroo sausages

The Hindu : Russians hunger for kangaroo sausages:

"CANBERRA: Russians are among the world's greatest lovers of kangaroos — especially in the form of sausages — the Australian Government said on Tuesday."

I found this reported in The Hindu but I saw it round somewhere on one of the sites earlier. That Australian news about a Russian buy is reported in the Hindu is telling me I live in a great world when it's working constructively.

My first experience of kangaroo steak was in North Adelaide. It had previously only been used as meat to give to pets then someone had the great idea of using it for our own consumption because we were getting a huge excess of kangaroos. The kangaroo steak was thinner than beef steak, covered the whole plate and was served with bread and a lovely green salad and a beautiful tomato sauce. It was delicious. It wasn't as "rich" as beef. I still like my beef because I'm a hunter gatherer by heritage. What the article doesn't tell you is that kangaroo meat is low in fat, low in cholestoral and an excellent addition to a healthy diet if you are watching fat intake. I have never had the sausages or actually seen them here, so I shall look because it would be an easy way to cook them and be great on the BBQ. I am surprised I haven't seen them because we have hundreds of sausages to choose from here. We have become gourmandisers in snags. I hope the Russians put them between two lumps of bread with a great big dollop of tomato sauce and maybe a bit of onion or mustard. YUM!
